Broccoli Tree

Ingredients:

  • 250 gms Broccoli
  • 2 big cloves of garlic (chopped)
  • 3 tsp soy sauce
  • Salt to taste
  • 2 pinches of pepper
  • 1table spoon cooking oil
  • 2 slices of brown bread
  • 1 hard boiled egg
  • 1 tsp melted butter

For garnishing:

  • A few toothpicks
  • 1 medium tomato (chopped)
  • 1 medium capsicum
  • A few pieces of sliced black olives

Method:

  1. Mash the hard boiled egg in a bowl, add the melted butter along with a pinch of pepper and salt to taste. Mix well.
  2.  Remove the crust from the slices of bread and roll (flatten) them softly with a rolling pin on a board.
  3.  Now spread the egg mix evenly on each slice. Roll each slice gently, somewhat like a sushi roll. Wrap each roll in a foil and refrigerate it for 10 minutes.
  4. Boil water in a pot and add ½ tsp water. Cut broccoli into medium size pieces (1.5inch long) and let them cook in boiling water for about 3-4 mins. Drain the water and keep aside
  5. Now in a pan take oil and sauté garlic till golden brown. Add soy sauce along with a pinch of pepper and salt to taste. Add the cooked broccoli and give it a quick toss. Remove from pan.
  6. Take the rolled breads and remove the foil. Insert a toothpick each in a few broccoli stems. Place the stems on the rolled bread as shown in picture.

Garnishing:

  1. Decorate a plate with a few capsicum slices and chopped tomato, topped with black olives as shown in picture above.
  2. Place the prepared broccoli tree and serve.

Kiddie Tip:  Serve immediately. Also, the tree log can be cut into round slices…the egg spiral inside is fun for kids!

Semolina Coconut Treat

Ingredients:

  • 30 gms desiccated coconut
  • 3 tbl spoons roasted semolina
  • 40 gms almonds (finely ground)
  • 30 gms raisins
  • 160 gms sweetened condensed milk
  • 1 tsp cardamom seeds (crushed)

For garnishing:

  • A few raisins
  • 10 gms desiccated coconut
  • A few fancy sprinkles

Method:

  1. Mix all the above mentioned ingredients in a bowl and knead it gently to make a soft dough. Cover the bowl with a lid and set aside for 7-10 minutes. (Initially the mix would appear sticky, but setting it aside would help the semolina and coconut to absorb all extra moisture and bind the ingredients well).
  2. Now form approx 10-12 medium size balls (ladoos).

Garnishing

  1. Roll the prepared ladoos in the desiccated coconut.
  2. Garnish with raisins and sprinkles as shown in the picture and serve.

Kiddie Tip: Serve chilled!

SMILEY FAMILY DOSA (rice, oats and lentils savoury pancakes)

Smiley Family Dosa (rice, oats and lentils savoury pancakes)

For the batter:

  • 60 gms of parboiled rice
  • 30 gms of short grain rice
  • 30 gms of split white lentils
  • 30 gms of green moong lentil (sprouted)
  • 30 gms of ground oats
  • ½ tea spoon ginger paste
  • Salt to taste
  • ½ tea spoon cooking oil
  • Water for desired consistency

For garnishing:

  • A few slices of tomato
  • A few circles cut of cheese slice
  • A few olives

Method:

  1. Wash together the par boiled rice, short grain rice along with split white lentils and soak for 1 hour. Grind to a smooth paste .Add water to make it of pouring consistency.
  2. Set the batter aside for 2 hours to ferment. Grind sprouts to a smooth paste, add to the fermented dosa batter along with the oats, oil, salt and ginger paste. Add enough water to get a smooth flowing consistency and season to taste.
  3. Heat a non stick dosa pan and smear with a few drops of oil. Pour a ladle full of batter in the centre and spread evenly with the back of a ladle.
  4. Sprinkle oil on the edges and cook till golden brown.

Garnish:

  • Place the cheese circle at one end; put half a slice of tomato on the edge. Place
    olives as shown in the picture.

A SMILEY FAMILY Dosa is ready to serve.

Kiddie Tip: Serve it with ketchup. Enjoy!
